Soft Pumpkin Cookie Recipe
What are you bringing to Thanksgiving this year? No time to make a pie? Cranberry Sauce already taken? These Soft Pumpkin Cookies are the perfect, quick, easy, and delicious treat to share with your family and friends.
Serves 3-4 dozen
Ingredients:
3 cups flour
1 cup butter (softened)
2 cups sugar
1 can pumpkin (15oz can)
1 ½ tsp baking soda
1 ½ tsp baking powder
1 ½ tsp cinnamon
1 ½ tsp vanilla extract
1 tsp salt
1 tsp nutmeg
1 egg
Directions:
Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt. In a separate bowl cream butter and sugar. Add pumpkin, egg, and vanilla. Beat lightly until creamy. Mix in dry ingredients. Blend well. Drop onto cookie sheet. Bake 15-20 at 350. Cool cookies.
Glaze
Ingredients:
2 cups powdered sugar
3 Tbs milk
1 Tbs melted butter
1 tsp vanilla extract
Directions:
Combine together in bowl. Mix until smooth.
Glaze cookies when cool.
