Fall Sweet Potato Bars Recipe!
Make Sweet Potato Bars for Thanksgiving for your family!

For the Crust
-1 pack of Graham Crackers
-1/4 Cup of Granulated White Sugar
-1 teaspoon salt
-10 Tablespoons of melted unsalted butter
For the Filling
-1 can of Sweet Potato Puree (or) 1 can of Sweet Potatoes
-3 teaspoons of granulated sugar
-3 large eggs
-1 teaspoon of vanilla extract
-2 teaspoons of ground cinnamon
-2 teaspoons of ground ginger
-1 and ¼ cup of heavy cream
For topping
-1 bag of mini marshmallows
Directions
- To make the crust:First preheat your oven to 350 degrees and get an 8×8 baking pan and cover the bottom with parchment paper. Crush or use a food processor to make your graham crackers into fine crumbles. Use a bowl or use your food processor to combine your sugar and the salt to your graham cracker crumble then add the melted butter; it should look like wet sand. Press into the pan and bake in the oven for 10 minutes until golden brown.
- to make the filling, if you have the sweet potato puree, get a bowl and add all your ingredients together. If you have canned sweet potatoes I used my smoothie maker to puree the sweet potatoes by dumping them in the smoothie make with the juice and pulsed it, then combine all the ingredients.
- Add the filling to your crust and bake until set (it should not jiggle if you shake it) 48 to 50 minutes. Let it cool for 10 minutes.
- Heat the broiler. Add your mini marshmallows to the top of the filling and place in the oven until they are golden brown (1-2 minutes). Keep an eye on them so they do not burn! Let the bars cool completely before slicing and serving.
